Dehydrating Leftover Broccoli

Check your fridge:

Got any leftover veggies?  If you have veggies that have not been seasoned with some sort of oil or fat, you can dehydrate them for later use.



Here is the remains of a large pot of steamed broccoli. I cut them into even sized slices and put them in the dehydrator.





Two days later:

After drying, they look a little blackish and shriveled, but that’s just fine.  Just bag and date them, then store them in a dark place.



What to do with them?
  • toss them into soups and stews
  • powder them and use that nutritious powder in soup stock or seasoning
  • sprinkle them into a casserole
  • crumble and sprinkle on a tossed salad
Don’t forget that wonderful thermos lunch!

  • Mix together a bag of your favorite veggies
    • Broccoli
    • Cauliflower
    • Onions
    • Diced bell peppers
    • Peas
    • Dehydrated cooked rice
    • Dehydrated cooked pasta (crumble first if desired)
    • Favorite herbs & spices
  • Pour a few tablespoons into a thermos bottle
  • Cover with water, seal, and shake to make sure all ingredients are wet
  • By lunch time you have a piping hot soup ready to eat
